Liz’s Kitchen: BLT Caesar Salad with Grilled Shrimp Recipe

Right now we're celebrating salads and this recipe is great! It's easy to make and brings a fun twist on an American classic. I was able to head over to the Tops Cooking School to make this next meal and work with the great people behind the Summer Celebration! BLT Caesar Salad with Grilled Shrimp
- 8 large uncooked shrimp
- 3 tablespoon olive oil
- 2 clove garlic
- none grated zest of 1 lemon
- pinch red pepper flakes
- 6 none strips thick-cut maple bacon
- 1 none Earthbound farm Organic Caesar Salad Kit
- 1 cup small cherry tomatoes
Take the cleaned shrimp and put it in a bowl with the oil, garlic, lemon zest, and red pepper flakes. Let marinate in the fridge for an hour.
While that's marinating you can prep the bacon and cut it up into inch size piece and cook on a skillet.
Take the shrimp and cook on the grill or skillet for about 2-3 minutes on each side.
Take the lettuce, bacon, and tomatoes and add the dressing in a big bowl and toss until salad is coated evenly. Dish the salad into bowls and then top with shrimp.
Enjoy and wow your dinner guests!
