I'm all about quick, easy but delicious meals! I always want to try new recipes but on weekdays I'm not about 42 ingredients with 82 steps. Probably like everyone else, I'm always perusing Pinterest for recipes to try! When I find a good one I like to share it with my mom and sister but why just let them in on it?

My latest recipe was a last minute find. I needed something new to try but it had to be simple. Long story short I ended up racing the clock to try and get it in the crockpot so it would have enough time to cook before dinnertime. It was like an episode of Chopped and I didn't hate it. The only thing that would have made this meal easier is if you didn't have to sear the chicken, but then the taste would suffer. Honestly though, the searing was super easy and well worth it!

It's a quick season of the chicken, sear them on medium high heat in butter for about three minutes on each side. Cut your potatoes and season those then put them in the crockpot and boom! You're done!

Here's what you're going to need:

  • 8 bone-in, skin-on chicken thighs
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried rosemary
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter
  • 2 pounds baby red potatoes, quartered
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1 cup freshly grated Parmesan
  • 2 tablespoons chopped fresh parsley leaves

The think I love about this recipe is that I have most the ingredients at home. All I had to get from the store was the chicken and potatoes! Once you have those ingredients and the crockpot you're ready to go!
