Once you try this recipe you will never buy prepackaged seasoning again! Hands down this is one of my favorite recipes I've found since doing the Whole30! Yes, this is a healthy recipe but you would never know! I found from a website called "Laughing Spatula" which has some really good go-to recipes!

 

For the fajitas, I have mine with lettuce wraps and guacamole but you can totally treat this like filling for a regular fajita and go nuts with tortillas, cheese, sour cream and whatever else you might want! I'm telling you though, these are so good you will never go back!

One Pan Chicken Fajitas

  • 1 pound chicken breasts - sliced thinly
  • 1 red pepper - sliced
  • 1 green pepper - sliced
  • 1 yellow pepper - sliced
  • 1 in onion - halved and cut slices

Seasoning Mix

  • 1/4 cup olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Pinch of chili flakes
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper

Preheat your oven to 400 degrees and start slicing your peppers, onions and chicken. Put all those ingredients in a big bowl and set aside.

Mix your seasoning ingredients in smaller bowl.  Once mixed, pour seasoning over the other ingredients and start mixing. Make sure all of you veggies and chicken are covered but the seasoning mix.

Pour onto baking pan thats has been lined with parchment paper and evenly distribute.

Cook for 25- 30 minutes until chicken is cooked and the peppers are to your liking and pull them out!

Now that they're done you can fix them however you would like but I would start with taking a lime wedge and squeezing it over the pan. The lime really adds something to the flavor the fajitas! You can use a lettuce wrap and some guac and be set or you can go a little more nuts and add whatever you want, but you won't need to add things just to cover up flavor or add flavor becuase these are awesome!
