Continuing the pumpkin theme until Thanksgiving, I give you a super easy dessert. When I say these are super easy, I mean these are super easy to make! There are only three recipes and really three steps! I found this dish when I was looking for easy pumpkin recipes from Delish and thought I would give it a try. Now, I'm telling you that the sugar is optional in this recipe BUT you NEED to use it! Actually, you need to do a lot to this recipe to make it worth it.  I did not use the sugar and the frosting was not enough to offset the bitterness of the cocoa. Honestly, out of everything that I've ever made for Liz's Kitchen this was my least favorite. It was too bitter and just not good. I would almost recommend using brownie mix and substituting the eggs for pumpkin or just adding pumpkin to the recipe. Not a great review but I wanted to share it with you because for some people bitter it good. Also, I want to share as a warning because the ease of the recipe draws you in and then it's too late!

3 Ingredient Pumpkin Brownies 

  • 3 cups pumpkin puree
  • 2 cups cocoa powder
  • 1 1/2 cups peanut butter
  • 1/3 cup sugar (optional)
  • Chocolate frosting (optional)

Combined first three ingredients in a large bowl and mix with a hand mixer until well mixed and smooth. If you want them a little sweeter then add in the sugar with the first three ingredients.

Once smooth pour them into the parchment lined 8x8 and the fill the dish out.

Bake for about 35 minutes or until it passes the toothpick test, then let cool.

Frost if you want and then let cool, slice and serve. This would go great as a side to ice cream! Grab the original recipe here.

After I made this and discovered how not good it was I stumbled across a Facebook post/video about it! The comments are hilarious and I wish I would have discovered this recipe on FB instead of Delish.com... enjoy.
