Waffles, bacon and eggs – oh, my! Yummy – a new Buffalo food truck is bringing breakfast to the streets of Western New York. Bacon isn't just for breakfast anymore and brunch isn't just for Sundays.

Chef and owner Chris Walters has years of experience in Buffalo restaurants and also worked as a paramedic before returning to kitchen duty. He was most recently the chef at Century Grill for most of a year. With business partner Darlene Nistor, Walters has brought Das Wafel to the streets after a two-year effort.

Das Wafel is “my take on what brunch should be, comfort food,” starting with scratch waffles and house-cured bacon, Walters said. Waffles are $6 with one topping, recently including apple dulce, ginger berry compote, sage Derby cheese and Nutella ganache. Bacon is $1 a slice. Add a free-range egg with “yolks the color of the sun” for $2, Walters said.
