Now that summer has arrived, so have my favorite summer salads. It’s funny how we classify some foods as ‘summer’ or ‘winter’ foods. I could eat potato salad in the winter if I wanted to, but it just seems wrong. Same goes for hot dogs and sausage. I rarely ever eat them in the winter, but in the summer, look out -- they’re everywhere.
