Is Buffalo ready for a fonut?  Maybe someday, but boy they’re big in Los Angeles.  Fonut is short for faux donut – a reinvented form of donut using methods other than frying.  It’s a different and healthier donut and people in Los Angeles love it.

Former pastry chef Waylynn Lucas took all her experience at an L-A hotel and a four-star pastry shop and applied it to creating donuts using steaming and baking methods to duplicate the taste and texture of a fried donut without actually frying it.  Her fonut shop also offers vegan and gluten-free varieties.  They also keep in mind people with food allergies and sensitivities.

This one fonut shop has taken off just like some of these cupcake specialty shops have.  In addition to the typical glazed and cream filled they offer some interesting and different flavors too.  How about chorizo
cheddar, coconut passion fruit, peanut butter and jelly, maple bacon and salted caramel?  How about a rosemary olive oil fonut?

They also make cakes and what they call Fonut Towers.

That's all well and good, but do they serve a good cup of coffee?  That's what really seems to drive donut sales in this town.
