Liz’s Kitchen: Crispy Garlic Dill Roasted Potatoes Recipe
IT'S GRILLING SEASON! If you can't tell I'm super pumped about that fact! I love grilling because it adds another flavor level to the meat that sometimes and oven or stove top just can't contribute! With grilling season being here it's all about the sides. Throwing a steak, chicken or pork chop is the easy part but having something that complements it is another! That's why I'm on the quest to find easy and healthy sides that can go with any meat! I found these potatoes in a blog I subscribe to called The Real Food Dietitians. The picture alone had me hooked! The thing that I love about this recipe is it is so interchangeable! any seasoning combination can be substituted in and it will be great! The say this tastes like ranch but I don't really taste it and that because dill has such an overpower presence! They are still SUPER tasty and so easy to make!
Crispy Garlic Dill Roasted Potatoes
- 1.5 -2 lbs. baby red potatoes
- 3 Tbsp. ghee, melted (or butter)
- 2 tsp. dried dill
- 1 tsp. dried parsley or chives
- 1 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. sea salt
- 1/4 tsp. pepper
Pre heat oven to 400 degrees and cut your potatoes in half.
Melt the ghee or butter in a bowl and add all the spices together and then mix.
Pour the mixture into a 9x13 pan so it coats the bottom.
Line the pan with all the potatoes cut side down. Then take a basting brush to brush the mixture on the top of the potatoes. then finish of with just a little sprinkle of salt to to the top of the potatoes. Then place it in the oven for 30-35 minutes.
Pull them out and serve! They'll be crispy on the outside and soft like mashed potatoes on the inside! This little nugget will have a punch of flavor too!
