Liz’s Kitchen: Pumpkin Spice Waffles Recipe
I'm continuing my goal of only posting recipes with pumpkin in them through Thanksgiving with a twist on a breakfast favorite! Pumpkin Spice Waffles are the perfect breakfast to spice up your fall morning. You can still serve it with your favorite side of bacon or sausage....or both! It's an easy recipe with few step but quite a few spices that will really deliver the flavor! I found this recipe through Pinterest on WomanDay.com! This recipe is really good and not overpowering at all, the only thing that would hold you back is the lack of a waffle iron.
Pumpkin Spice Waffles
- 2½ c. all-purpose flour
- 1 tbsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- ½ tsp. baking soda
- ½ tsp. salt
- ½ tsp. fresh-ground nutmeg
- ¼ tsp. cloves
- 4 large eggs
- 2 c. buttermilk
- 1 c. pumpkin purée
- ½ c. dark brown sugar
- ¼ c. unsalted butter
- 1 tsp. pure vanilla extract
Take the flour, baking powder, cinnamon, ginger, baking soda, salt, ground nutmeg and cloves and mix together in a mixing bowl. Set the bowl aside and grab another large mixing bowl.
In the new bowl add the eggs, buttermilk, pumpkin puree, dark brown sugar, butter and pure vanilla extract and whisk together.
Continue to whisk and slowly while adding the dry mixture until all is added and batter is smooth,
Pour into the waffle iron and follow the normal cooking time for your individual iron.
