I'm certainly not yet to the level that Liz Mantel has achieved in her kitchen, but I watch my share of Food Network shows and I hear the tips that Chef Gordon Ramsey gives on some of the shows he stars in.  And if I need to I can find my way around a kitchen.  Let's just put it this way, I'm not going hungry.

The Lenten season always is a challenge in trying to find tasty meatless meals on Friday.  One of my favorite things to eat during Lent is egg salad.  And it's so simple to make.  My grandmother showed me how to make it when I was a kid.

If you can make a hard-boiled egg, you can make egg salad.  That's the key.  And my grandmother explained the difference between mayonnaise and salad dressing.  Salad dressings such as Miracle Whip are a less expensive substitute for mayonnaise.  I suppose it's a matter of taste, but my grandmother always went with mayonnaise and that's what I prefer.

So here it is from Dale's Kitchen, my grandmother's simple recipe for egg salad.
